Cigar flavoured ice-cream?

Jordi Rocca of Michelin-Starred restaurant El Celler de Can Roca in Spain developed a cigar-flavoured ice cream. He describes how he first came up with the idea:

One day, my teacher talked about how the air is important for an ice cream. It is very important that the air is completely clean. So the ice cream does not absorb odors. So it does not add another flavor. I went home and thought the other way around.

He went on to create an ice cream that was infused with cigar smoke, a dessert surprised everyone.

After the success of the cigar-ice cream Jordi went on to create one of his most famous dishes: “The Rainy Forest.” which contains sterilised dirt with the idea of reminding the eater of childhood.

Jordi has also made sheep milk’s ice cream with edible spun wool.

Breast-milk ice cream

In 2011 activist Matt O’Connor launched The Icecreamists, in Covent Gardens in London. The restarurant served a range of ice-creams, the most famous and controversial was Baby Gaga, an ice-cream made with human breast milk.

The ice-cream was later banned by the Health Protection Agency.
